Dish of the Day: Sweet Potato SaladServes 4 as a side dish

400g sweet potatoes, peeled and diced
2 spring onions, finely sliced
2tsp extra light mayonnaise
2tsp low fat natural yoghurt
1tsp red wine vinegar
2tsp capers, rinsed and chopped
Put the potatoes in a pan of cold water, bring to the boil and simmer for 8 – 10 mins until they are just cooked through, then drain.
Mix together all of the other ingredients then poor over the cooked potatoes. Season and stir thoroughly but gently so you don’t break the potatoes.
Serve warm or cold as a great accompaniment for most summer dishes.
