LighterLife recipe: Speedy spicy biryani

1/2 medium cauliflower, cut into small florets
2 medium sweet potatoes, peeled and cut into small chunks
1 large onion, finely sliced
1 bay leaf
1 tsp cinnamon
1 tsp turmeric
1-2 tsp chilli flakes (depending on how hot you like it)
2 packets microwaveable brown basmati rice
200g green beans, cut in half
200ml LighterLife Savoury Stock
Juice of 1 lemon
small bunch of coriander, chopped

Simmer the cauliflower and sweet potato in a large pan of boiling water for 6-8 minutes until they are tender but not too soft.

In a separate large pan with a lid, cook the onion in 50 ml water for 5 minutes until soft and the water has mostly evaporated. Add the bay leaf, spices and the drained vegetables and stir to coat everything in the spice.

Squeeze and squash the rice packets to break up any lumps of rice. Tip it in with the veg, stir, then add the green beans and stock. Put on the lid and leave to cook on a medium heat for 10 minutes until all the water has been absorbed. Stir through the lemon juice and coriander, check the seasoning and serve.
