Cooking time: 20 minutes
Celery x 3 sticks diced
LighterLife Savoury Stock x 4tsp
Hot water – 1 litre
Potatoes x 400g, peeled and cut into small chunks
Bay Leaves x 2
Leeks x 2, cut into disks
Sweet corn x125g, tinned
Skimmed milk x 200ml
Smoked Haddock x 600g, skinned and cut into chunks
Ground Black Pepper (To Taste)
Parsley x small bunch
In a large saucepan heat two teaspoons of water then add the celery put the lid on and sweat for 5 minutes.
Combine the water and savoury broth powder, stirring until dissolved, then add to the pan along with the potato and bay leaves and simmer for 10 minutes until the potatoes are tender.
Add the leaks, sweet corn, milk and haddock and a good grind of black pepper.
Bring back to a simmer and cook for a further 5 minutes until the fish is cooked through.
Check the seasoning then divide between four bowls and top with parsley leaves.
*For a change use half smoked haddock and half prawns.
