Celebrate the Festive Period by making this Lighter Mince Pie Recipe…

The thought of going without a mince pie this Christmas is utterly depressing and the festive period is a time for happiness!

This mince pie recipe makes for a lighter offering, with fewer calories and it’s fun to make with the family…
Lighter Mince Pie Recipe
Cook time: 1 hour 15 minutes
Ready in: 1 day

Ingredients for the mincemeat:
2 finely chopped (gala) apples
1 cup raisins
1 cup sultanas
1/4 cup finely chopped blanched almonds
1/4 cup finely chopped hazelnuts
1 tbsp vanilla extract
1/2 cup apricots
1 tbsp linseeds
3 tbsp agave nectar
1-2 tsp mixed spice
1 tsp cinnamon
A pinch of cloves, ginger and nutmeg
5-10 tbsp water

Cook all of the ingredients together in a pan for about 30 minutes to 1 hour until it acheives a fairly thick consistency and the flavours have mixed thoroughly. Leave to cool overnight.

Ingredients for the pastry:
225g plain flour: 50g buckwheat, 50g wholemeal, 75g gluten free, 50g regular
175g margarine
65g caster/fructose sugar
1 beaten egg

Firstly, mix the flour and margarine together until it forms breadcrumbs. Then mix in the remaining ingredients until a dough is formed. Wrap in clingfilm and leave in the fridge overnight, or for at least 1 hour.

The following morning, roll out the dough and cut out circles for the bases, and smaller circles for the tops. Put the bases in a cake tray and fill with the pre-perpared mincemeat. Top with the smaller circles and egg wash. Be as creative as you like with shapes!

Place the pies in the oven for 15 minutes, or until golden.
