Harissa paste x 2 tsp
Green Lentils x 1 can, rinsed and drained
LighterLife Savoury Stock x 50ml
Salmon fillets x 2
Lemon x 1
Fresh coriander x small bunch
In a non-stick frying pan with a lid, cook the harissa paste briefly until it becomes fragrant. Add the lentils and stock, and stir to combine. Lay the salmon fillets on top and cover them tightly. Steam for 8-10 minutes until cooked.
Once cooked, lift out the salmon and keep warm. Turn up the heat and throw in the spinach, a good squeeze of lemon, and stir through until it has wilted.
Serve the lentils topped with the salmon, squeeze a little more lemon over and scatter with coriander leaves.
