Chicken Tagine Serves 4
Preparation Time: 30 minutes
Cooking time: 20 minutes
- 500ml LighterLife Savoury Stock
- 8 shallots, peeled but left whole
- 1 garlic clove, crushed
- 2cm root ginger, grated
- 1 cinnamon stick
- 1tsp cumin
- 1/2tsp dried chilli
- 4 chicken breasts, skin and all visible fat removed
- 400g butternut squash, peeled, deseeded and cut into chunks
- 1 tin chickpeas, drained
Heat two tablespoons of LighterLife stock in a large saucepan, toss in the shallots and put on the lid. Cook for 4-5 minutes until they start to soften. Add the garlic, ginger, cumin, cinnamon, ground coriander and chilli and stir.
Cut each chicken breast in half and add to the pan, and brown on each side. Add the butternut squash, chickpeas and the remainder of the stock. Cook for 30 minutes then stir in the chopped coriander and serve.
