Bored of the same old lunches? Eating a healthy, balanced diet doesn’t have to be dull. This fresh and zingy summer recipe will help banish those lunchbox blues and give you something nutritious and delicious to enjoy during the week.

50g cooked chicken, shredded
finger-length cucumber, cut into strips
1 small carrot, grated
1 punnet cress
1 tbsp reduced-fat hummus
1 tbsp quark or low-fat, plain yoghurt
or fromage frais
1 wholemeal pitta bread, cut in half and split open
Mix the shredded chicken breast, cucumber strips, grated carrot and cress. Blend the hummus with the quark, yoghurt or fromage frais. Lightly toast the pitta bread halves, then stuff the chicken mixture into each half and top with the hummus drizzle.
TIP// Avoid soggy pittas in your lunchbox by packing the filling separately then stuffing the pitta pockets with the filling just before eating.
