Blueberry_hotcakesWEBA sweet breakfast doesn’t have to be calorie-laden – it’s all about making the right choices. If you’ve got a sweet tooth, why not try these yummy low-calorie hotcakes this weekend?

Serves 4
152 kcal per serving

Ingredients
40g wholemeal flour
40g plain flour
2 tsp baking powder
1 large egg
125g fat-free Greek yoghurt
2 tbsp skimmed milk
4 tsp runny honey
finely grated zest of 1 orange
75g fresh blueberries

To serve
4 tbsp fat-free Greek yoghurt
2 tsp runny honey
100g fresh blueberries

Mix the two flours together in a bowl with the baking powder. Lightly beat the egg in a jug and whisk in the fat-free yoghurt, milk, honey and orange zest.

Put a large non-stick frying pan or skillet over a medium heat. Using half the mixture, spoon four mounds into the pan, leaving plenty of space between each. Spread the batter out with the back of a spoon, being careful not to make them too thin. Press half of the blueberries into the batter.

Cook the hotcakes for four minutes on each side until golden, then transfer to a warm oven to keep warm while you cook the other half of the mixture.

Serve two hotcakes per person on warm plates. Top each plate with a spoonful of yoghurt, drizzle of honey and a sprinkle of blueberries.
