Aubergine Couscous Salad
Serves 2

Cooking time: 20 minutes

2 tsp tahini paste, oil drained off
1 aubergine, sliced into disks
100g couscous (dry weight)
150 ml LighterLife Savoury Stock
1 tbsp pine nuts
8 cherry tomatoes, halved
3 spring onions, sliced
Small bunch mint, chopped
Juice of 1 lemon

Heat the grill. Spread a thin layer of tahini on each slice of aubergine and grill for 5-6 minutes on each side, until they soften and brown.

While the aubergine is cooking, put the couscous in a bowl and pour over the stock, give it a stir and pop a lid or upturned plate on top and leave to stand for 8 minutes.

Toast the pine nuts in a warm pan until golden. In a large bowl combine the couscous, aubergine, tomatoes and spring onions. Scatter over the pine nuts and mint and squeeze in the lemon. Combine everything well and serve.
