LighterLife recipe: Venison au poivre

Dish of the Day:  Venison au poivreWhen living a lighter life it doesn’t matter if you’re a vegan, vegetarian or just fancy a meat free meal this delicious and filling recipe will not disappoint.

Serves 2

52 grams protein
4 grams carbohydrates
5 grams fat

Preparation Time: 10 minutes
Cooking time: 15 minutes

1 tbsp black peppercorns, crushed
2 x 150g-200g venison steaks
50ml LighterLife savoury stock
2 shallots, peeled and slices
2 tbsp quark
To serve: tenderstem broccoli and green beans

First, crush the peppercorns, spread them on a plate then press one side of each steak into them.

Next, set a non-stick frying pan over a medium heat. When it’s hot, add the peppered venison steaks and cook for 5-6 minutes on each side (for medium steaks – adjust to your preference.) Then, remove from the pan and set aside to rest on a warm plate.

Using the same pan as you cooked the steaks, pour in the stock and add the shallots. Cook for 3-4 minutes until they soften, then stir in the quark and season to taste.

Meanwhile, steam the broccoli and green beans until just tender.

Serve the steaks on top of the sauce, with the broccoli and green beans on the side.
