Reduced salt soy sauce x 2 tbsp
Red Chilli x 1, chopped
Cloves garlic x 2, crushed
Ginger x 3cm, grated
Smoked tofu x 500g
LighterLife Savoury Stock x 100ml
Chestnut Mushrooms x 12, quartered
Mangetoute x 200g
Soya beans (frozen or tinned) x 200g
Spring onions x 4, sliced
Spring greens x 2 large handfuls, chopped
Coriander x small bunch, chopped
In a bowl, combine the soy sauce, chilli, garlic and ginger, add the tofu and leave to marinate while you chop the rest of the vegetables.
Heat a wok or large frying pan with the stock, then add the mushrooms, mangetout and soya beans, stir and cook for 5 minutes.
Add the spring onions, spring greens, tofu and marinade to the pan and continue to stir-fry for another 5 minutes.
