30g dry weight soba (buckwheat) noodles
80 g mangetout, finely sliced
1 small carrot, peeled and cut into matchsticks
½ red chilli, deseeded and finely sliced
1 tbsp toasted sesame seeds
50g cooked chicken, shredded
Light soy sauce
Cook the noodles and drain well. Add the mangetout, carrot and chilli, then toss in the toasted sesame seeds and shredded chicken. Drizzle with soy sauce to taste.
Tip: Swap the cooked chicken for a tin of tuna in spring water. To toast the sesame seeds, simply pop them in a small frying pan over a medium heat for 2 minutes, stirring occasionally.
