LighterLife: Greek baked butter beans

Ingredients
large onion, finely diced
2 cloves of garlic, finely diced
250ml LighterLife SavouryS tock
2 tbsp tomato puree
2 x 400g tinnerd chopped tomatoes
2 tbsp dried oregano
3 x 400g tinned butter beans, drained
Bunch fresh parsley, chopped

Heat the oven to 180°c or gas mark 4. In a large casserole dish, cook the onion and garlic in the stock with the lid on for 5-8 minutes until they are soft. Stir in the puree, tinned tomatoes and oregano, and season to taste. Bring to the boil.

Add the beans and stir well, then cook in the oven for 45 minutes without a lid. The sauce will thicken and the beans will take on the rich flavours. Let the beans cool to room temperature then scatter with the chopped parsley and serve.

Top Tip: If you’re on LighterLife Lite, reduce the quantity of butter beans to 2 x 400g tins, giving you 1 serving of protein and 3 servings of veg per serving.
