LighterLife recipe: Beef Stroganoff

Dish of the day: Beef Stroganoff

Per serving – 262 calories, 37 grams protein, 7.1 grams carbohydrates, 5.6 grams fat

Preparation time – 10 minutes
Cooking time – 40 minutes

Ingredients:
LighterLife savoury stock x 150ml
6 shallots
14 button mushrooms
1 clove of garlic
300g rump steak, trimmed of all visible fat and cut into strips
1 tbsp tomato puree
1 tbsp Dijon mustard
2 tsp chopped tarragon
1 tbsp less than 3% fat crème fraiche

Heat the stock in a large saucepan, add the shallots, mushrooms and garlic, and simmer for 8-10 minutes. Once the shallots are tender, add the steak and cook for 2-3 minutes until browned.

Stir in the tomato puree, mustard and tarragon, season to taste and then stir in the fat-free crème fraiche. Bring to a simmer and then serve with basmati or brown rice.
